Description

A quick, fresh, and healthy meal featuring chicken, quinoa, fresh veggies, and tzatziki sauce.


Ingredients

  • 1 lb chicken breast, diced
  • 2 cups cooked quinoa
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, sliced
  • 1 cup feta cheese, crumbled
  • 2 cups spinach or mixed greens
  • Salt and pepper to taste
  • Olive oil for cooking
  • For Tzatziki sauce:
  • 1 cup Greek yogurt
  • 1 cucumber (grated and drained)
  • 2 cloves garlic (minced)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat. Season the chicken with salt and pepper, and cook until fully cooked.
  2. In a bowl, combine the cooked chicken, quinoa, diced cucumber, bell pepper, cherry tomatoes, and red onion.
  3. For the tzatziki sauce, mix together Greek yogurt, grated cucumber, minced garlic, lemon juice, salt, and pepper.
  4. Serve the chicken mixture over a bed of spinach or mixed greens and drizzle with tzatziki sauce.

Notes

Store chicken, quinoa, and veggies in separate airtight containers for up to 3 days. Tzatziki keeps well in a sealed jar.
