Ingredients

- 1 lb chicken breast, diced
- 2 cups cooked quinoa
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 red onion, sliced
- 1 cup feta cheese, crumbled
- 2 cups spinach or mixed greens
- Salt and pepper to taste
- Olive oil for cooking
- For Tzatziki sauce:
- 1 cup Greek yogurt
- 1 cucumber (grated and drained)
- 2 cloves garlic (minced)
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat. Season the chicken with salt and pepper, and cook until fully cooked.
- In a bowl, combine the cooked chicken, quinoa, diced cucumber, bell pepper, cherry tomatoes, and red onion.
- For the tzatziki sauce, mix together Greek yogurt, grated cucumber, minced garlic, lemon juice, salt, and pepper.
- Serve the chicken mixture over a bed of spinach or mixed greens and drizzle with tzatziki sauce.
Notes
Store chicken, quinoa, and veggies in separate airtight containers for up to 3 days. Tzatziki keeps well in a sealed jar.
