- 4 boneless chicken breasts
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- Salt and pepper to taste
- Fresh pineapple slices for grilling
- Green onions for garnish
Instructions
- Mix together pineapple juice, soy sauce, brown sugar, garlic, ginger, salt, and pepper in a bowl.
- Add the chicken breasts to the marinade and let sit for at least 30 minutes or up to overnight.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard the marinade.
- Grill the chicken for about 6-7 minutes per side, or until fully cooked.
- Add pineapple slices to the grill during the last few minutes of cooking and cook until grill marks appear.
- Serve the chicken topped with grilled pineapple slices and garnish with chopped green onions.

For more flavor, try adding spices like cayenne pepper or paprika to the marinade.
