Description

A delightful blend of juicy chicken and sweet grilled pineapple, perfect for summer barbecues.


Ingredients

  • 4 boneless chicken breasts
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Fresh pineapple slices for grilling
  • Green onions for garnish

Instructions

  1. Mix together pineapple juice, soy sauce, brown sugar, garlic, ginger, salt, and pepper in a bowl.
  2. Add the chicken breasts to the marinade and let sit for at least 30 minutes or up to overnight.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and discard the marinade.
  5. Grill the chicken for about 6-7 minutes per side, or until fully cooked.
  6. Add pineapple slices to the grill during the last few minutes of cooking and cook until grill marks appear.
  7. Serve the chicken topped with grilled pineapple slices and garnish with chopped green onions.
