Description
Harira is a hearty Moroccan soup, traditionally enjoyed during Ramadan, rich in spices and nutrients.
Ingredients

- 1 cup green lentils
- 1 large onion, finely chopped
- 2 tomatoes, diced
- 1/2 cup chickpeas, soaked and drained
- 2 tablespoons olive oil
- 2 teaspoons ground cumin
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- Salt and black pepper to taste
- 4 cups vegetable broth
- Fresh herbs like cilantro or parsley, for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onions and sauté until soft and translucent.
- Stir in the diced tomatoes, cumin, ginger, cinnamon, salt, and pepper. Cook for 5 minutes until the tomatoes break down.
- Add the lentils, chickpeas, and vegetable broth to the pot. Bring it to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the lentils are tender.
- If the soup becomes too thick, feel free to add more broth or water. Adjust the seasoning if necessary.
- Chop fresh herbs and stir them into the soup just before serving for a burst of flavor.
Notes
Serve hot with fresh herbs and lemon wedges. Pairs well with crusty bread or Moroccan pastries.
