A deliciously refreshing pasta salad that combines the flavors of Mexican street corn with vibrant veggies and a creamy dressing.
Ingredients

- 8 oz pasta
- 2 cups corn (fresh or canned)
- 1 cup cherry tomatoes (halved)
- 1 red bell pepper (diced)
- 1/4 cup red onion (finely chopped)
- 1/4 cup fresh cilantro (chopped)
- 1/2 cup mayonnaise
- 2 tbsp lime juice
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the corn, cherry tomatoes, bell pepper, red onion, and cilantro.
- In a separate bowl, mix together the mayonnaise, lime juice, chili powder, salt, and pepper.
- Add the cooled pasta to the vegetable mixture and pour the dressing over it.
- Toss until everything is well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Serve cold or at room temperature. Garnish with extra cilantro or lime wedges for added appeal.
