Description

Ingredients

  • 3 large lemons
  • 1 cup heavy cream
  • ⅓ cup sugar
  • ¼ teaspoon kosher salt
  • ½ tablespoon lemon zest
  • 2½ tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Grate ½ tablespoon of zest from one lemon. Slice the others in half lengthwise and juice them through a fine-mesh sieve to get 2½ tablespoons of juice.
  2. Combine heavy cream, sugar, salt, and lemon zest in a small saucepan over medium-low heat. Simmer gently while whisking for about 5 minutes.
  3. Add lemon juice and vanilla extract to the saucepan and whisk to combine. Strain the mixture through a fine-mesh sieve.
  4. Divide the mixture evenly into the lemon halves. Cover with plastic wrap and refrigerate for at least 4 hours.
  5. Let sit at room temperature for 5 to 10 minutes before serving.
