Description

Deliciously creamy mini cheesecakes with banana flavor and a crunchy vanilla wafer base, perfect for parties or a quick treat.


Ingredients

  • 1 cup vanilla wafers, crushed
  • 4 tablespoons butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, mashed
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • Additional banana slices for topping
  • Mini vanilla wafers for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine crushed vanilla wafers and melted butter, then press the mixture into the bottom of mini cheesecake cups. Bake for 10 minutes and let cool.
  2. Beat cream cheese and sugar in a mixing bowl until smooth. Add vanilla extract and mashed bananas, mixing until fully combined.
  3. Pour the cheesecake filling over the cooled crusts.
  4. Bake again for 20-25 minutes or until set. Let cool completely in the fridge.
  5. Whip heavy cream with powdered sugar until soft peaks form. Top each cheesecake with whipped cream, banana slices, and a mini vanilla wafer before serving.

Notes

Use ripe bananas for the best flavor. Chill fully so the filling sets well.
