- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 cup brown sugar
- 1 cup pecans, chopped
- 1/2 cup corn syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the flour, softened butter, and powdered sugar until crumbly. Press this mixture into the bottom and sides of mini muffin tins to form a crust.
- Whisk together brown sugar, corn syrup, eggs, vanilla extract, and salt until well combined.
- Stir in the chopped pecans.
- Pour the pecan filling into each individual crust, filling them about 3/4 full.
- Bake for 20-25 minutes, or until the filling is set.
- Let them cool before removing from the pans and serving.
Notes
For added flavor, consider adding chocolate chips or a sprinkle of sea salt on top before baking.
