Description

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 cup brown sugar
  • 1 cup pecans, chopped
  • 1/2 cup corn syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the flour, softened butter, and powdered sugar until crumbly. Press this mixture into the bottom and sides of mini muffin tins to form a crust.
  3. Whisk together brown sugar, corn syrup, eggs, vanilla extract, and salt until well combined.
  4. Stir in the chopped pecans.
  5. Pour the pecan filling into each individual crust, filling them about 3/4 full.
  6. Bake for 20-25 minutes, or until the filling is set.
  7. Let them cool before removing from the pans and serving.
