Description

A delicious Moroccan Tagine that combines tender chicken, seasonal vegetables, and chickpeas with aromatic spices, perfect for any holiday gathering.


Ingredients

  • 2 lbs of chicken, cut into pieces
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 cups of vegetables (like carrots, zucchini, and bell peppers)
  • 1 can of chickpeas, drained
  • 2 cups of chicken broth
  • 2 tablespoons of olive oil
  • 2 teaspoons of ground cumin
  • 1 teaspoon of ground cinnamon
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a pot over medium heat. Add the chopped onion and minced garlic, sauté until they are soft.
  2. Add the chicken pieces and brown them on all sides.
  3. Stir in the ground cumin, ground cinnamon, salt, and pepper. Let it cook for a few minutes to enhance the flavors.
  4. Add the vegetables and chickpeas to the pot. Pour in the chicken broth and bring everything to a boil.
  5. Reduce the heat to low, cover, and let it simmer for about 45 minutes until the chicken is cooked through and tender.
  6. Serve hot, garnished with fresh cilantro.

Notes

Serve with warm bread or over couscous to soak up the sauce. Store leftovers in an airtight container in the refrigerator for 3 to 4 days.
