A delicious Moroccan Tagine that combines tender chicken, seasonal vegetables, and chickpeas with aromatic spices, perfect for any holiday gathering.
Ingredients

- 2 lbs of chicken, cut into pieces
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 cups of vegetables (like carrots, zucchini, and bell peppers)
- 1 can of chickpeas, drained
- 2 cups of chicken broth
- 2 tablespoons of olive oil
- 2 teaspoons of ground cumin
- 1 teaspoon of ground cinnamon
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the olive oil in a pot over medium heat. Add the chopped onion and minced garlic, sauté until they are soft.
- Add the chicken pieces and brown them on all sides.
- Stir in the ground cumin, ground cinnamon, salt, and pepper. Let it cook for a few minutes to enhance the flavors.
- Add the vegetables and chickpeas to the pot. Pour in the chicken broth and bring everything to a boil.
- Reduce the heat to low, cover, and let it simmer for about 45 minutes until the chicken is cooked through and tender.
- Serve hot, garnished with fresh cilantro.
Notes
Serve with warm bread or over couscous to soak up the sauce. Store leftovers in an airtight container in the refrigerator for 3 to 4 days.
