Ingredients

- 2 lbs beef, cut into chunks
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 1/2 cup dried apricots, chopped
- 1/2 cup olives, pitted and sliced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the olive oil in a large pot or tagine over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Stir in the beef chunks and sear until browned on all sides.
- Stir in the cumin, coriander, cinnamon, and ginger, cooking for an additional minute.
- Pour in the diced tomatoes and beef broth. Bring to a simmer.
- Add the dried apricots and olives, and season with salt and pepper.
- Cover and cook on low heat for 90 to 120 minutes, or until the beef is tender.
- Garnish with fresh cilantro before serving.
Notes
Serve with fluffy couscous or warm bread to soak up the delicious sauce. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months.
