Description

A hearty Moroccan Beef Stew with a rich blend of spices and dried fruits, perfect for cozy family dinners.


Ingredients

  • 2 lbs beef, cut into chunks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1/2 cup dried apricots, chopped
  • 1/2 cup olives, pitted and sliced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large pot or tagine over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Stir in the beef chunks and sear until browned on all sides.
  4. Stir in the cumin, coriander, cinnamon, and ginger, cooking for an additional minute.
  5. Pour in the diced tomatoes and beef broth. Bring to a simmer.
  6. Add the dried apricots and olives, and season with salt and pepper.
  7. Cover and cook on low heat for 90 to 120 minutes, or until the beef is tender.
  8. Garnish with fresh cilantro before serving.

Notes

Serve with fluffy couscous or warm bread to soak up the delicious sauce. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months.
