- 2 cups of rice
- 1 lb chicken breast, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can chickpeas, drained
- 1 cup chicken broth
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1/2 tsp cinnamon
- Salt and pepper to taste
- Olive oil
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pan over medium heat.
- Add chopped onion and garlic; sauté until softened.
- Stir in the diced chicken and cook until browned.
- Add the cumin, coriander, paprika, and cinnamon; cook for 2 minutes.
- Stir in the rice and chickpeas.
- Pour in the chicken broth, season with salt and pepper, and bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked.
- Fluff rice with a fork, garnish with fresh cilantro, and serve.
Notes
For added flavor, marinate chicken in spices and oil before cooking. You can customize with different protein or vegetables.
