Ingredients

  • 2 cups of rice
  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can chickpeas, drained
  • 1 cup chicken broth
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • Salt and pepper to taste
  • Olive oil
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add chopped onion and garlic; sauté until softened.
  3. Stir in the diced chicken and cook until browned.
  4. Add the cumin, coriander, paprika, and cinnamon; cook for 2 minutes.
  5. Stir in the rice and chickpeas.
  6. Pour in the chicken broth, season with salt and pepper, and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked.
  8. Fluff rice with a fork, garnish with fresh cilantro, and serve.
