Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 can chickpeas, drained
  • 1/2 cup dried apricots, chopped
  • Fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, sauté until softened.
  2. Stir in cumin, coriander, cinnamon, paprika, salt, and pepper.
  3. Add the chicken pieces, browning them on all sides.
  4. Pour in the chicken broth, then add chickpeas and apricots.
  5. Cover the pan, reduce heat, and simmer for 30-40 minutes, until chicken is cooked through.
  6. Garnish with fresh cilantro before serving.

Notes

For extra flavor, marinate the chicken in spices and olive oil for a few hours or overnight before cooking.
