A refreshing and crunchy salad inspired by Olive Garden, perfect as a side dish or light lunch.
Ingredients

- 1 head Romaine lettuce, chopped
- 1/2 cup Olives, sliced
- 1 medium Cucumbers, sliced
- 1/4 cup Olive oil
- 2 tbsp Red wine vinegar
- 1 tsp Dijon mustard
- 2 cloves Garlic, minced
- Salt, to taste
- Pepper, to taste
Instructions
- Chop the romaine lettuce and place it in a large salad bowl.
- Add sliced olives and cucumbers to the bowl.
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
- Drizzle the dressing over the salad and toss to combine.
- Serve immediately as a side dish.
Notes
For extra crunch, add chopped bell peppers or radishes. Make the dressing ahead of time to let the flavors mix well.
