Description

A refreshing and crunchy salad inspired by Olive Garden, perfect as a side dish or light lunch.


Ingredients

  • 1 head Romaine lettuce, chopped
  • 1/2 cup Olives, sliced
  • 1 medium Cucumbers, sliced
  • 1/4 cup Olive oil
  • 2 tbsp Red wine vinegar
  • 1 tsp Dijon mustard
  • 2 cloves Garlic, minced
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Chop the romaine lettuce and place it in a large salad bowl.
  2. Add sliced olives and cucumbers to the bowl.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
  4. Drizzle the dressing over the salad and toss to combine.
  5. Serve immediately as a side dish.

Notes

For extra crunch, add chopped bell peppers or radishes. Make the dressing ahead of time to let the flavors mix well.
