Description

A fragrant One-Pot Moroccan Chicken Tagine that brings warm spices and vibrant flavors to your table.


Ingredients

  • 2 lbs chicken thighs
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 1 can chickpeas, drained
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • Salt and pepper to taste
  • 2 cups couscous or rice
  • Fresh cilantro for garnish

Instructions

  1. Heat some oil over medium heat in a large pot. Add the onion and garlic, and sauté until translucent.
  2. Add the chicken thighs and brown them on all sides.
  3. Stir in the carrots, chickpeas, diced tomatoes, chicken broth, cumin, cinnamon, ginger, salt, and pepper.
  4. Bring to a simmer, cover, and cook for about 25-30 minutes until the chicken is cooked through.
  5. Stir in the couscous or rice, cover again, and let it sit for 5-10 minutes until the grains are fluffy.
  6. Garnish with fresh cilantro before serving.

Notes

For extra flavor, marinate the chicken in the spices for a few hours before cooking. You can also add more cumin or cinnamon to taste.
