A fragrant One-Pot Moroccan Chicken Tagine that brings warm spices and vibrant flavors to your table.

- 2 lbs chicken thighs
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 1 can chickpeas, drained
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- Salt and pepper to taste
- 2 cups couscous or rice
- Fresh cilantro for garnish
Instructions
- Heat some oil over medium heat in a large pot. Add the onion and garlic, and sauté until translucent.
- Add the chicken thighs and brown them on all sides.
- Stir in the carrots, chickpeas, diced tomatoes, chicken broth, cumin, cinnamon, ginger, salt, and pepper.
- Bring to a simmer, cover, and cook for about 25-30 minutes until the chicken is cooked through.
- Stir in the couscous or rice, cover again, and let it sit for 5-10 minutes until the grains are fluffy.
- Garnish with fresh cilantro before serving.
Notes
For extra flavor, marinate the chicken in the spices for a few hours before cooking. You can also add more cumin or cinnamon to taste.
