Ingredients

- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- Cook the orzo pasta in salted boiling water according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine cooled orzo, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Consider using whole wheat orzo for a healthier option. Feel free to add your favorite vegetables or grilled chicken/shrimp for a protein boost.
