A hearty breakfast casserole made with eggs, sausage, bread, and cheese, perfect for busy mornings.
Ingredients

- 1 lb breakfast sausage
- 8 large eggs
- 2 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 slices of bread, cubed
- 2 cups shredded cheese (cheddar or your choice)
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
Instructions
- Cook the breakfast sausage in a skillet over medium heat until browned. Drain excess fat.
- Whisk together the eggs, milk, salt, and pepper in a large bowl.
- Grease a baking dish and layer the bread cubes at the bottom.
- Add the cooked sausage, onions, bell peppers, and half of the cheese on top of the bread.
- Pour the egg mixture evenly over the layers.
- Cover the baking dish with plastic wrap and refrigerate overnight.
- Preheat the oven to 350°F (175°C).
- Bake uncovered for about 45-55 minutes, or until the casserole is set and golden.
- Sprinkle the remaining cheese on top during the last 10 minutes of baking.
- Let it cool slightly before serving.
Notes
Customize with your favorite vegetables or cheeses. Add spicy sausage for extra flavor.
