Description
These Parmesan Herb Roasted Potatoes are golden, crispy on the outside, and soft on the inside, loaded with garlic-herb flavor. Perfect as a side dish.

- 2 lb baby potatoes, washed and halved
- 3 tablespoons olive oil
- 3 garlic cloves, minced
- ½ cup grated Parmesan cheese
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- Fresh chopped parsley for garnish
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the halved potatoes with olive oil, minced garlic, Parmesan, thyme, rosemary, paprika, salt, and pepper until fully coated.
- Spread the potatoes on the baking sheet in a single layer with the cut side down for maximum crispiness.
- Roast for 35–40 minutes, flipping halfway through, until the edges are deep golden and crisp.
- Remove from the oven and sprinkle with fresh parsley before serving.
Notes
For maximum crispiness, place potatoes cut-side down. Use freshly grated Parmesan for better melt and flavor. Ensure potatoes are the same size for even roasting. Add chili flakes for heat if desired.
