Description

These Parmesan Herb Roasted Potatoes are golden, crispy on the outside, and soft on the inside, loaded with garlic-herb flavor. Perfect as a side dish.


Ingredients

  • 2 lb baby potatoes, washed and halved
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the halved potatoes with olive oil, minced garlic, Parmesan, thyme, rosemary, paprika, salt, and pepper until fully coated.
  3. Spread the potatoes on the baking sheet in a single layer with the cut side down for maximum crispiness.
  4. Roast for 35–40 minutes, flipping halfway through, until the edges are deep golden and crisp.
  5. Remove from the oven and sprinkle with fresh parsley before serving.

Notes

For maximum crispiness, place potatoes cut-side down. Use freshly grated Parmesan for better melt and flavor. Ensure potatoes are the same size for even roasting. Add chili flakes for heat if desired.
