Delightful twist on classic peach cobbler, these cookies combine warm flavors of peaches and cinnamon into a chewy treat.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup chopped fresh peaches
- 1 cup chopped pecans (optional)
- 1/2 cup oatmeal (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine flour, baking soda, salt, and cinnamon in another bowl. Gradually blend this mixture into the creamed mixture.
- Fold in the chopped peaches and nuts or oatmeal if using.
- Drop rounded tablespoons of dough onto ungreased baking sheets.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks.
Notes
Best enjoyed fresh out of the oven, but can also be served at room temperature. To keep them fresh, store in an airtight container.
