- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract

- 2–3 ripe peaches, peeled and diced
- 1/4 cup brown sugar (for peach filling)
- 1/2 cup oats (for crumble)
- 1/4 cup flour (for crumble)
- 1/4 cup brown sugar (for crumble)
- 1/4 cup melted butter (for crumble)
- 1 cup powdered sugar (for glaze)
- 2–3 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla.
- Whisk together the flour, baking soda, salt, and cinnamon in another bowl. Gradually add this mixture to the creamed mixture.
- Combine the diced peaches and brown sugar in a saucepan over medium heat, cooking until the peaches have softened.
- Scoop dough onto a parchment-lined baking sheet, creating a small well in the center, and add a spoonful of the peach filling.
- Mix oats, flour, brown sugar, and melted butter for the crumble, then sprinkle over the cookies.
- Bake for 12-15 minutes until the edges are golden.
- Whisk powdered sugar with milk for the glaze until smooth. Drizzle over cookies once they have cooled.
