Description

Delightful peach crumb bars featuring ripe peaches and a buttery crumb topping, perfect for any occasion.


Ingredients

  • 2 cups fresh peaches, diced
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup cold butter, cubed
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. Combine diced peaches with granulated sugar, lemon juice, and vanilla extract in a mixing bowl. Set aside.
  3. Mix together flour, oats, brown sugar, baking powder, and salt in another bowl. Add cold butter and mix until crumbly.
  4. Press half of the crumb mixture into the bottom of the prepared baking dish.
  5. Spread the peach mixture over the crust, and then sprinkle the remaining crumb mixture on top.
  6. Bake for 35-40 minutes, or until the top is golden brown.
  7. Allow to cool before cutting into bars and serving.

Notes

For best flavor, use ripe peaches. These bars can be served plain or with ice cream.
