- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 3 packages (8 oz each) cream cheese, softened
- 1 1/4 cups sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 4 cups fresh peaches, peeled and sliced
- 1 tablespoon lemon juice
- 1/2 cup flour
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of a 9-inch springform pan.
- Beat the cream cheese, 1 1/4 cups sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each.
- Combine sliced peaches with lemon juice in another bowl.
- Pour the cheesecake batter over the crust, then layer the peaches on top.
- Mix flour, cinnamon, and sugar in a small bowl, then sprinkle over the peaches.
- Bake for 1 hour or until set.
- Cool, then refrigerate for at least 240 minutes before serving.
Notes
Always use ripe peaches for the best flavor. Adjust sugar based on peach sweetness. Store leftovers properly in the refrigerator.
