Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 3 packages (8 oz each) cream cheese, softened
  • 1 1/4 cups sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 4 cups fresh peaches, peeled and sliced
  • 1 tablespoon lemon juice
  • 1/2 cup flour
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of a 9-inch springform pan.
  2. Beat the cream cheese, 1 1/4 cups sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each.
  3. Combine sliced peaches with lemon juice in another bowl.
  4. Pour the cheesecake batter over the crust, then layer the peaches on top.
  5. Mix flour, cinnamon, and sugar in a small bowl, then sprinkle over the peaches.
  6. Bake for 1 hour or until set.
  7. Cool, then refrigerate for at least 240 minutes before serving.

Notes

Always use ripe peaches for the best flavor. Adjust sugar based on peach sweetness. Store leftovers properly in the refrigerator.
