Description

A bright and fresh peach lemonade using real ripe peaches and fresh lemon juice, perfect for cooling off on warm days.


Ingredients

  • 68 ripe large peaches (about 3 pounds)
  • 1/2 cup granulated sugar (for peach puree)
  • 1/2 cup water (for peach puree)
  • 1 tablespoon fresh lemon juice (for peach puree)
  • 1 1/2 cups freshly squeezed lemon juice (from 810 medium lemons)
  • 1 cup granulated sugar (for simple syrup)
  • 1 cup water (for simple syrup)
  • 46 cups cold water (for dilution)
  • Fresh peach slices (for garnish)
  • Lemon wheels or wedges (for garnish)
  • Fresh mint sprigs (for garnish)
  • Ice cubes

Instructions

  1. Prepare the peaches by washing, pitting, and dicing them.
  2. Cook the diced peaches with sugar, water, and a little lemon juice until very soft.
  3. Mash the cooked peaches, then press them through a fine sieve to make smooth peach puree. Cool it to room temperature.
  4. Make a simple syrup by heating equal parts sugar and water until the sugar dissolves. Let it cool.
  5. Juice the lemons and strain out seeds.
  6. Mix the cooled simple syrup and lemon juice in a large pitcher. Add the cooled peach puree and stir well.
  7. Add cold water a little at a time (start with 4 cups) and taste. Add up to 6 cups total to reach the strength and sweetness you like.
  8. Chill the pitcher for at least 30 minutes. Serve over ice with peach slices, lemon wheels, and mint.

Notes

Use ripe, sweet peaches for the best flavor. Taste as you add water for the desired strength.
