- 1 cup chopped pecans
- 1 cup packed brown sugar
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F and grease or line a 12-cup muffin tin.
- In a large bowl, mix chopped pecans, brown sugar, flour, and salt until evenly combined.
- In a separate bowl, lightly beat the eggs. Whisk in melted butter and vanilla until smooth.
- Pour wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 18–22 minutes until the tops are golden and a toothpick inserted comes out with moist crumbs.
- Let muffins cool in the pan for 5 minutes, then carefully transfer to a wire rack.
Notes
For extra flavor, toast the pecans before adding them to the batter. You can also add chocolate chips or a sprinkle of cinnamon.
