Description

Delicious muffins that combine the flavors of traditional pecan pie into a convenient and easy-to-eat form.


Ingredients

  • 1 cup chopped pecans
  • 1 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease or line a 12-cup muffin tin.
  2. In a large bowl, mix chopped pecans, brown sugar, flour, and salt until evenly combined.
  3. In a separate bowl, lightly beat the eggs. Whisk in melted butter and vanilla until smooth.
  4. Pour wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 18–22 minutes until the tops are golden and a toothpick inserted comes out with moist crumbs.
  7. Let muffins cool in the pan for 5 minutes, then carefully transfer to a wire rack.

Notes

For extra flavor, toast the pecans before adding them to the batter. You can also add chocolate chips or a sprinkle of cinnamon.
