- 2 medium Sweet potatoes
- 1 can Black beans, drained and rinsed
- 1 cup Fresh vegetables (bell peppers, red onion, cilantro)
- 2 tbsp Lime juice
- 2 tbsp Olive oil
- 1 tsp Salt
- 1/2 tsp Pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and chop the sweet potatoes into bite-sized pieces.
- Toss the sweet potatoes with olive oil, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for about 25-30 minutes, or until caramelized and tender.
- Combine the roasted sweet potatoes, black beans, and fresh vegetables in a large bowl.
- Drizzle with lime juice and toss to combine.
- Serve as a salad or a hearty side dish.
