Description

Delightful soft peach cookies made with fresh peaches and a hint of cinnamon, perfect for any occasion.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg

  • 1 cup fresh peaches, peeled and diced
  • 1/4 cup peach preserves
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon sugar for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  3. Cream the softened butter and sugar until fluffy in a separate bowl.
  4. Beat in the egg and vanilla extract.
  5. Gradually mix the dry ingredients into the wet ingredients.
  6. Fold in the diced peaches and peach preserves until well combined.
  7. Drop spoonfuls of the dough onto the prepared baking sheet.
  8. Mix the cinnamon and sugar together and sprinkle it over the cookies.
  9. Bake for 12-15 minutes until the edges are golden.
  10. Allow to cool slightly before serving.
