Ingredients

  • ½ cup (100 g) granulated sugar
  • ¾ cup (90 g) cake flour
  • ½ teaspoon baking powder
  • ¼ cup (60 ml) milk
  • 2 tablespoons (30 ml) vegetable oil
  • 1 teaspoon vanilla extract
  • Blue food coloring (gel recommended)
  • 1 cup (240 ml) heavy whipping cream
  • ¼ cup (30 g) powdered sugar
  • ½ teaspoon pineapple or coconut extract
  • 2 tablespoons cream cheese or mascarpone (optional)
  • ½ cup whipped cream or buttercream (tinted blue)
  • Chocolate chips (white and dark)
  • Black food gel or melted dark chocolate

Instructions

  1. Preheat the oven to 350°F. Line a jelly roll pan with parchment paper.
  2. Whip the eggs and sugar together until thick and pale.
  3. Fold in the sifted flour and baking powder until combined.
  4. Mix the milk, oil, vanilla, and blue food coloring in a separate bowl. Gently fold this mixture into the batter.
  5. Pour the batter into the prepared pan and bake for 12–14 minutes. Cool the cake while rolled in a towel.
  6. Whip the cream with powdered sugar and flavor extracts. Optionally, add cream cheese for a thicker filling.
  7. Unroll the sponge cake, spread the whipped cream filling evenly, and roll it back up. Chill the completed cake roll.
  8. Decorate with blue-tinted whipped cream, chocolate eyes, and other fun features before serving.

Notes

Make sure to whip the eggs and sugar until very thick for the best texture. Use gel food coloring for a bright color. Chill well after decorating for cleaner slices.
