  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries, sliced
  • 2 tablespoons sugar (for macerating)
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)
  • Chocolate shell (store-bought or homemade)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Add eggs, milk, oil, and vanilla, and mix on medium speed for 2 minutes.
  4. Stir in boiling water until combined; the batter will be thin.
  5. Pour batter into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Let them cool.
  6. Macerate strawberries by combining them with 2 tablespoons of sugar and letting them sit while cakes cool.
  7. Beat heavy cream, powdered sugar, and vanilla extract until soft peaks form for the whipped cream.
  8. Layer one cake on a plate, spread some whipped cream, and add a layer of macerated strawberries.
  9. Place the second cake on top, frost the top and sides with whipped cream, and drizzle chocolate shell over the top.
  10. Top with additional sliced strawberries if desired. Enjoy!

For best results, ensure all ingredients are at room temperature before mixing. You can substitute strawberries with raspberries or blueberries for a different flavor.
