Ingredients

- 2 cups all-purpose flour
- 1 cup semolina flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 cup warm water
- 4 tablespoons olive oil
- 2 large onions, caramelized
- 1/2 cup fresh herbs (parsley, cilantro, or mint), chopped
- Salt and pepper to taste
- Butter or additional oil for frying
Instructions
- In a large bowl, mix the all-purpose flour, semolina flour, salt, and sugar. Gradually add warm water and knead until a smooth dough forms.
- Let the dough rest for about 30 minutes, covered with a damp cloth.
- In a skillet, caramelize the onions over medium heat until golden and soft. Add chopped herbs, and season with salt and pepper.
- Divide the dough into small balls. Roll out each ball into thin circles.
- Place a spoonful of the onion and herb mixture in the center of each circle. Fold the dough over to seal the filling inside.
- Heat butter or oil in a skillet over medium heat. Fry the msemen on both sides until golden and crispy.
- Serve hot with mint tea for a delightful Moroccan experience.

Make sure to knead the dough well for a smooth texture. Caramelize onions slowly for maximum flavor.
