Description

Delightful stuffed Moroccan msemen filled with caramelized onions and fresh herbs, perfect for breakfast or as a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup semolina flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup warm water
  • 4 tablespoons olive oil
  • 2 large onions, caramelized
  • 1/2 cup fresh herbs (parsley, cilantro, or mint), chopped
  • Salt and pepper to taste
  • Butter or additional oil for frying

Instructions

  1. In a large bowl, mix the all-purpose flour, semolina flour, salt, and sugar. Gradually add warm water and knead until a smooth dough forms.
  2. Let the dough rest for about 30 minutes, covered with a damp cloth.
  3. In a skillet, caramelize the onions over medium heat until golden and soft. Add chopped herbs, and season with salt and pepper.
  4. Divide the dough into small balls. Roll out each ball into thin circles.
  5. Place a spoonful of the onion and herb mixture in the center of each circle. Fold the dough over to seal the filling inside.
  6. Heat butter or oil in a skillet over medium heat. Fry the msemen on both sides until golden and crispy.
  7. Serve hot with mint tea for a delightful Moroccan experience.
