Description

A refreshing and colorful summer salad featuring fresh corn, cucumbers, and tomatoes, perfect as a side dish for barbecues or picnics.


Ingredients

  • 2 cups Fresh corn (cooked and kernels removed)
  • 1 cup Cucumber (diced)
  • 1 Red bell pepper (diced)
  • 1/2 Red onion (finely chopped)
  • 1 cup Cherry tomatoes (halved)
  • 1/4 cup Fresh cilantro (chopped)
  • 2 tablespoons Lime juice
  • 2 tablespoons Olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Combine the fresh corn, cucumber, red bell pepper, red onion, cherry tomatoes, and cilantro in a large bowl.
  2. Whisk together the lime juice, olive oil, salt, and pepper in a separate small bowl.
  3. Pour the dressing over the salad and toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld.
