A delightful and nutritious salad packed with fresh fruits, greens, and a creamy lemon herb dressing.


Ingredients

Scale
  • 3 cups super greens mix
  • 1 cup kale, roughly chopped
  • 1 cup strawberries, diced
  • 1 cup blackberries
  • 1 cup blueberries
  • 1/4 cup shelled pistachios, roughly chopped
  • 2 tablespoons pepitas
  • Blueberry goat cheese, crumbled
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon mustard
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup fresh mint leaves, packed
  • 1/4 cup fresh parsley leaves
  • 2 tablespoons fresh oregano leaves, packed
  • Coarse salt and ground black pepper to taste

Instructions

  1. Pulse all the ingredients for the dressing in a blender or food processor until completely combined. Adjust with salt and pepper to taste, then set aside.
  2. Toss the salad ingredients with the dressing in a large bowl. Serve topped with freshly ground pepper if desired. Enjoy!

Notes

For extra flavor, you can add sliced avocado or cucumber. Substitute Greek yogurt and goat cheese with plant-based options for a vegan salad.
