Description

A fresh and vibrant salad perfect for summer meals and barbecues, featuring tomatoes, cucumbers, and onions.


Ingredients

  • 2 large tomatoes
  • 1 large cucumber
  • 1 medium onion
  • 2 tablespoons olive oil
  • 1 tablespoon vinegar (white or apple cider)
  • Salt and pepper to taste
  • Fresh herbs (like parsley or basil), optional

Instructions

  1. Wash the tomatoes and cucumber under running water. Pat them dry with a clean towel.
  2. Chop the tomatoes into bite-sized pieces and place them in a large bowl.
  3. Peel the cucumber, then slice it in half lengthwise. Remove the seeds with a spoon and cut into thin slices. Add these to the bowl with the tomatoes.
  4. Thinly slice the onion and add it to the salad.
  5. Whisk together the olive oil, vinegar, salt, and pepper in a separate small bowl until well combined.
  6. Pour the dressing over the salad and gently toss everything together until the vegetables are well coated.
  7. If using, chop fresh herbs and sprinkle them on top before serving.

Notes

Best served immediately, but can be chilled for 30 minutes for enhanced flavor. Store leftovers in an airtight container in the refrigerator for up to two days.
