Ingredients

- 1 cup of grated carrots
- 1 cup of chickpeas, cooked and mashed
- 1/2 cup of rolled oats
- 1/4 cup of nutritional yeast
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- A handful of fresh herbs (like parsley or cilantro)
Instructions
- Combine the grated carrots, mashed chickpeas, rolled oats, nutritional yeast, olive oil, garlic powder, salt, and pepper in a mixing bowl.
- Mix well until all ingredients are fully combined.
- Shape the mixture into small bunny shapes or round patties.
- Heat a non-stick skillet over medium heat. Cook each bunny for about 4-5 minutes on each side or until golden brown.
- Remove from heat and allow to cool slightly.
Notes
Press the chickpeas well to remove excess moisture before mashing them. Customize with your favorite spices or vegetables.
