Description

Ingredients

  • 1 cup of grated carrots
  • 1 cup of chickpeas, cooked and mashed
  • 1/2 cup of rolled oats
  • 1/4 cup of nutritional yeast
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • A handful of fresh herbs (like parsley or cilantro)

Instructions

  1. Combine the grated carrots, mashed chickpeas, rolled oats, nutritional yeast, olive oil, garlic powder, salt, and pepper in a mixing bowl.
  2. Mix well until all ingredients are fully combined.
  3. Shape the mixture into small bunny shapes or round patties.
  4. Heat a non-stick skillet over medium heat. Cook each bunny for about 4-5 minutes on each side or until golden brown.
  5. Remove from heat and allow to cool slightly.

Notes

Press the chickpeas well to remove excess moisture before mashing them. Customize with your favorite spices or vegetables.
