Description

A fresh and colorful salad that combines earthy beets with creamy feta, packed with nutrients and flavor.


Ingredients

Scale
  • 2 large beets
  • 1 cucumber
  • 100g feta cheese
  • 2 tablespoons olive oil
  • 1 lemon (juice)
  • 2 tablespoons fresh dill (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap the beets in aluminum foil and roast for about 45-60 minutes, or until tender. Let them cool, then peel and slice.
  2. While the beets are roasting, dice the cucumber and crumble the feta cheese.
  3. In a small bowl, whisk together olive oil, lemon juice, chopped dill, salt, and pepper to make the dressing.
  4. In a large bowl, combine the sliced beets, cucumber, and feta.
  5. Drizzle the dressing over the salad and toss gently to combine.
  6. Serve immediately or chill in the refrigerator before serving.
