Ingredients

- 2 large beets
- 1 cucumber
- 100g feta cheese
- 2 tablespoons olive oil
- 1 lemon (juice)
- 2 tablespoons fresh dill (chopped)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wrap the beets in aluminum foil and roast for about 45-60 minutes, or until tender. Let them cool, then peel and slice.
- While the beets are roasting, dice the cucumber and crumble the feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, chopped dill, salt, and pepper to make the dressing.
- In a large bowl, combine the sliced beets, cucumber, and feta.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately or chill in the refrigerator before serving.
Notes
Store leftovers in an airtight container; it’s best to keep the dressing separate until serving.
