Ingredients

  • 1/2 cup Tapioca pearls
  • 2 tablespoons Sugar (to taste)
  • 1 cup Water
  • Food coloring (optional)
  • 2 tablespoons Cornstarch (for coating)
  • 1 teaspoon Flavoring (optional, e.g., watermelon extract)

Instructions

  1. Blend watermelon until smooth and strain to remove pulp.
  2. Mix the watermelon juice with sugar (to taste) and any optional flavoring.
  3. Prepare tapioca pearls according to package instructions.
  4. Combine the tapioca pearls with the watermelon juice.
  5. If making popping boba, mix the watermelon juice with sodium alginate and drop it into a calcium lactate bath to form spheres.
  6. Rinse and coat with cornstarch if needed.
  7. Serve in a drink or on their own.

Notes

For best results, use fresh watermelon for maximum flavor. To brighten the appearance, consider adding food coloring.
