Ingredients

1 lb thinly sliced beef (flank, sirloin, or steak strips)

3 cups cooked cold rice

2 tablespoons olive oil

1 small onion, diced

1 cup mixed vegetables (peas, carrots, corn)

2 garlic cloves, minced

3 tablespoons gluten-free soy sauce (tamari)

1 teaspoon gluten-free sesame oil

½ teaspoon black pepper

Salt as needed

2 green onions, sliced

Instructions

Heat 1 tablespoon oil in a large skillet over medium-high heat. Add the sliced beef, season lightly with salt and pepper, and cook 3–4 minutes until browned. Remove and set aside.

Add the remaining oil, then add onion and cook 2 minutes. Add mixed vegetables and garlic and sauté 1 minute.

Add the cold rice, breaking up any clumps. Pour in the tamari, sesame oil, and black pepper. Stir well.

Return the cooked beef to the skillet and toss everything together. Cook 2–3 minutes until heated through and lightly toasted.

Stir in green onions and serve immediately.

Tips

Use cold leftover rice for the best texture.

Slice beef very thin to cook quickly and stay tender.

Add chili flakes for heat or a squeeze of lime for brightness.
