½ cup cornstarch

¼ cup gluten-free soy sauce (tamari)
3 tablespoons honey
2 tablespoons brown sugar
2 tablespoons rice vinegar (gluten-free)

2 garlic cloves, minced
1 teaspoon grated ginger
½ cup water
1 tablespoon cornstarch mixed with 1 tablespoon water

Instructions
Season chicken with salt and pepper. In one bowl, whisk eggs; in another bowl, mix gluten-free flour and cornstarch.
Dip chicken pieces in egg, then coat in the flour-cornstarch blend.
Heat oil in a skillet over medium-high heat. Pan-fry chicken until golden and crispy, 4–6 minutes. Remove and set aside.
In a saucepan, whisk tamari, honey, brown sugar, rice vinegar, sesame oil, garlic, ginger, and water. Bring to a simmer.
Add the cornstarch slurry and cook 1–2 minutes until the sauce becomes thick and glossy.
Add crispy chicken to the sauce and toss until fully coated.
Garnish with sesame seeds and green onions. Serve immediately.
