Description
A delightful twist on classic waffles, combining fresh broccoli and cheese for a flavorful and nutritious meal.
Ingredients
Scale
- 2 cups fresh broccoli florets, finely chopped
- 1 cup shredded cheese (cheddar or your favorite cheese)
- 1 cup all-purpose flour
- 1 cup milk
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (or melted butter)
Instructions
- Steam the broccoli: Steam the broccoli florets for about 5 minutes until tender. Chop finely and let cool.
- Mix dry ingredients: In a large mixing bowl, combine flour, baking powder, salt, and pepper.
- Combine wet ingredients: In a separate bowl, whisk together milk, eggs, and olive oil.
- Mix together: Pour the wet ingredients into the dry ingredients and stir until just combined.
- Add broccoli and cheese: Fold in the steamed and chopped broccoli along with the shredded cheese until evenly distributed.
- Preheat waffle iron: Preheat your waffle iron according to its manufacturer’s instructions.
- Cook the waffles: Spray the waffle iron with non-stick cooking spray. Pour an appropriate amount of batter onto the preheated waffle iron and close the lid. Cook until the waffles are golden brown, usually about 4-5 minutes depending on your waffle iron.
- Repeat: Continue until all the batter is used, keeping the finished waffles warm in an oven set to low heat. Each waffle should be fluffy on the inside with a crisp exterior, making for a delightful eating experience!
Notes
For a savory breakfast, top them with sour cream or extra cheese. They pair well with fresh fruit or a light salad.
