Ingredients
For the Chocolate Cake
1 ¾ cups all-purpose flour
1 ½ cups granulated sugar
¾ cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 large eggs, room temperature
1 cup whole milk
½ cup vegetable oil
1 tablespoon vanilla extract
1 cup hot water
For the Caramel Pecan Layer
1 ½ cups caramel sauce (homemade or store-bought, no alcohol)
1 ½ cups chopped pecans
For the Chocolate Ganache
1 cup heavy cream
1 ½ cups semi-sweet chocolate chips
1 tablespoon butter
Instructions
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
Whisk flour, sugar, cocoa, baking soda, baking powder, and salt.
Add eggs, milk, oil, and vanilla. Mix until smooth. Add hot water last and stir , the batter will be thin.
Pour half the batter into the pan and bake for 15 minutes.
Remove from oven and immediately pour the caramel evenly over the warm cake. Sprinkle pecans on top.
Pour the remaining batter over the caramel layer and spread gently.
Return to the oven and bake another 20–25 minutes or until the center is set.
Heat cream until steaming, then pour over chocolate chips and butter. Let sit 2 minutes, then whisk into a smooth ganache.
Pour ganache over the cooled cake and let it set before slicing.
Tips
Bake the first layer partially so the caramel stays in the center.
Use hot water to deepen the chocolate flavor.
Chill the cake slightly before slicing for clean layers.
Top with extra pecans for crunch.
