- 2 pounds baby potatoes
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Preheat the oven to 450°F (230°C).
- Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
- Drain the potatoes and let cool slightly.
- Place the potatoes on a baking sheet and smash each one gently with a fork.
- Melt the butter in a small saucepan and add the minced garlic. Cook until fragrant, about 1 minute.
- Drizzle the garlic butter over the smashed potatoes.
- Sprinkle grated Parmesan cheese, salt, and pepper over the potatoes.
- Bake in the preheated oven for 20-25 minutes or until golden and crispy.
- Garnish with chopped parsley before serving.
