Description

This simple quiche is quick to make and full of flavor.


Ingredients

  • 1 cup fresh spinach, chopped
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheese (e.g., mozzarella or cheddar)
  • 1/4 cup onion, finely chopped
  • Salt and pepper to taste
  • Olive oil or cooking spray for greasing the pan

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the chopped onion in a little olive oil until translucent in a skillet.
  3. Whisk together the eggs and milk in a bowl. Stir in the sautéed onions, chopped spinach, and shredded cheese.
  4. Season with salt and pepper.
  5. Grease a pie dish with olive oil or cooking spray. Pour the mixture into the dish.
  6. Bake for 30-35 minutes, or until the quiche is set and lightly golden on top.
  7. Let it cool slightly before slicing and serving.

Notes

Squeeze excess water from spinach if it is very wet. Beat eggs well for a smooth texture. If you like a browner top, broil for 1-2 minutes at the end, watching closely.
