This simple quiche is quick to make and full of flavor.
Ingredients

- 1 cup fresh spinach, chopped
- 4 large eggs
- 1/2 cup milk
- 1/2 cup shredded cheese (e.g., mozzarella or cheddar)
- 1/4 cup onion, finely chopped
- Salt and pepper to taste
- Olive oil or cooking spray for greasing the pan
Instructions
- Preheat your oven to 350°F (175°C).
- Sauté the chopped onion in a little olive oil until translucent in a skillet.
- Whisk together the eggs and milk in a bowl. Stir in the sautéed onions, chopped spinach, and shredded cheese.
- Season with salt and pepper.
- Grease a pie dish with olive oil or cooking spray. Pour the mixture into the dish.
- Bake for 30-35 minutes, or until the quiche is set and lightly golden on top.
- Let it cool slightly before slicing and serving.
Notes
Squeeze excess water from spinach if it is very wet. Beat eggs well for a smooth texture. If you like a browner top, broil for 1-2 minutes at the end, watching closely.
