Description

A hearty Moroccan stew featuring tender meat, vibrant vegetables, and aromatic spices, served over fluffy couscous.


Ingredients

  • 1 lb Chicken or lamb
  • 2 Carrots, chopped
  • 1 can Chickpeas, drained
  • 1 cup Couscous
  • 2 tbsp Olive oil
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tsp Cinnamon
  • 1 tsp Cumin
  • 1 tsp Paprika
  • Salt, to taste
  • Pepper, to taste
  • ½ cup Dried apricots or raisins
  • Fresh herbs (like cilantro or parsley), for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic; sauté until soft.
  2. Add your choice of chicken or lamb, browning on all sides.
  3. Stir in chopped carrots, chickpeas, cinnamon, cumin, paprika, salt, and pepper.
  4. Add enough water to cover the meat and bring to a simmer.
  5. Cook until the meat is tender, adding more water if necessary.
  6. Stir in dried apricots or raisins towards the last 10 minutes of cooking.
  7. Prepare couscous according to package instructions.
  8. Serve the stew over couscous, garnished with fresh herbs.

Notes

Customize the ingredients based on what you have. For a vegetarian option, substitute meat with additional vegetables and increase chickpeas.
