- 1.5 lbs Baby potatoes
- 3 cloves Garlic, minced
- 1/4 cup Chives, chopped
- 1/4 cup Butter, melted
- 1/2 cup Parmesan cheese, grated
- 1 tsp Salt
- 1/2 tsp Pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- Mix melted butter, minced garlic, chopped chives, salt, and pepper in a bowl.
- Add the halved potatoes to the bowl and toss until well coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for about 25-30 minutes or until golden brown and tender.
- Sprinkle grated Parmesan cheese over the potatoes and return to the oven for an additional 5 minutes.
- Serve warm and enjoy.
Notes
Cut the potatoes into uniform sizes for even cooking. Adjust garlic and chives to taste. Consider adding paprika or other herbs for extra flavor.
