Description

A light and refreshing salad featuring crunchy cucumbers, tender shrimp, and a zesty dressing, perfect for warm days and quick meals.

Ingredients

Scale
  • 1 lb shrimp, peeled and deveined
  • 2 large cucumbers, diced
  • 4 green onions, chopped
  • 1/4 cup fresh herbs (such as dill, cilantro, or parsley), chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. Combine the diced cucumbers, chopped green onions, and fresh herbs in a bowl.
  2. Mix the mayonnaise and lime juice in another bowl until well combined.
  3. Add the shrimp to the cucumber mixture and then pour the dressing over it.
  4. Toss everything together until well coated.
  5. Season with salt and pepper to taste.
  6. Serve chilled.

Notes

Use fresh shrimp for the best flavor; frozen shrimp works too if thawed properly. Experiment with herbs to customize flavor and add spices if desired.
