Description

A delightful orzo salad filled with fresh vegetables and a tangy dressing, perfect for any season.


Ingredients

  • 1 cup of orzo pasta
  • 1 cup of cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup of feta cheese, crumbled
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of olive oil
  • 2 tablespoons of red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the orzo according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and parsley.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
