Description
A hearty dish of fried potatoes and sausage, perfect for any meal of the day.
Ingredients

- 1 lb smoked sausage
- 1 large onion, chopped
- 5–6 russet potatoes
- 1/2 cup water
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder (optional)
- Vegetable oil
Instructions
- Cut sausage into bite-sized pieces.
- Drizzle a little vegetable oil in a large skillet (nonstick is best if you have it) then sauté sausage until well browned.
- Peel the potatoes and cut them into cubes (about 3/4 inch).
- Add potatoes, onions, 3-4 tablespoons of vegetable oil, water, salt, pepper, and garlic powder if using. Stir well.
- Once the water starts to boil, reduce heat to medium-low, cover the skillet, then cook for 10 minutes.
- Use a spatula to scrape the bottom and flip the sausage and potatoes once or twice to make sure they’re not sticking.
- Remove the lid then increase the temperature to medium-high.
- Continue cooking for another 10 minutes or until the potatoes are tender with some crispy edges.
- Flip the sausage and potatoes (scraping the bottom) so that the potatoes can crisp up a bit in the oil.
- Serve immediately.
Notes
For a vegetarian version, replace the sausage with plant-based alternatives and feel free to add more vegetables.
