Ingredients
For the Cake Layers
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs, room temperature
1 tablespoon vanilla extract
3 cups all-purpose flour
1 tablespoon baking powder

1 cup whole milk
½ cup sour cream
For the Coconut–Pecan Filling
1 cup evaporated milk
1 cup granulated sugar
3 egg yolks
½ cup unsalted butter
1 teaspoon vanilla extract
1 ½ cups sweetened shredded coconut
1 cup chopped pecans
For the White Frosting
8 oz cream cheese, softened
½ cup unsalted butter, softened
4 cups powdered sugar
2 teaspoons vanilla extract
1–2 tablespoons milk (if needed)
Instructions
Preheat oven to 350°F (175°C). Grease and flour three 8-inch cake pans.
Beat butter and sugar for 3–4 minutes until light and fluffy. Add eggs one at a time, then mix in vanilla.
In a separate bowl whisk flour, baking powder, and salt.
Add dry ingredients to the batter alternating with milk and sour cream. Mix until smooth.
Divide batter evenly between pans and bake for 22–26 minutes or until a toothpick comes out clean.
Make the filling: In a saucepan, whisk evaporated milk, sugar, egg yolks, and butter over medium heat. Cook 8–10 minutes until thickened. Remove from heat and stir in vanilla, coconut, and pecans. Cool completely.
Make the frosting: Beat cream cheese and butter until creamy. Add powdered sugar and vanilla, beating until smooth and fluffy.
Assemble: Place the first cake layer, spread a generous amount of coconut-pecan filling. Add the second layer and repeat. Top with the final cake layer and frost the outside with the white frosting. Add extra pecans if desired.
